Mediterranean Garden Salad

This refreshing cucumber and herb tartine combines crisp vegetables, olive oil, and fresh herbs for a light Mediterranean-inspired meal.

Ingredients

  • 2 cups butter lettuce or mixed greens
  • 1 small cucumber, sliced
  • 2-3 radishes, sliced
  • 1/2 cup cherry tomatos, halved
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon sunflower seeds

Dressing

  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons plain yogurt or dairy-free yogurt 
  • salt and pepper to taste
  • Optional: crumbled feta cheese

Instructions

  1. Add lettuce, cucumber, radish, tomatoes, parsley, and dill to a bowl.
  2. Whisk together olive oil, lemon juice, honey, salt, and pepper.
  3. Drizzle the dressing over the salad and toss lightly.
  4. Top with sunflower seeds and feta if desired.
  5. Serve immediately.
